Try my recipe for savory, cheesy stuffed pasta shells. It's super delicious and easy. It makes a great freezer meal, and it's a fast and easy dish for working couples who want to come home from work and slide a pan of goodness into the microwave or oven., so double or triple the recipe! Serve with a salad and you've got a great meal. Due to illness, I've been trying to bring out some of the oldies. . Hope you enjoy! Jill’s Stuffed Pasta Shells Here's the recipe: 20 Pasta shells (brand of your choosing) 1 large jar of pasta sauce or homemade Approximately 3/4 cup grated Parmesan cheese Approximately 3/4 cup of your favorite cheese (Asiago, mozzarella, jack, etc. ) 1-16 oz. container part-skim ricotta cheese 1 ½ teaspoon dried parsley, or 2 tablespoons chopped fresh parsley Black pepper to taste Salt to taste – best when ready to serve ¼ cup chopped ham ½ teaspoon garlic powder/granulated ¼ onion powder/granulated Cooking Pasta: Boil the pasta shells for approximately 9-10 minutes (in salted water) until just done. Once cooked, drain the shells and run them under cold water to stop the cooking process. Drain well, separate the shells, then lay out on a plate and set aside until ready to use. These may be covered and put into the fridge for later use (1-2 days) Cheese Filling: Put the ricotta cheese, about 2 tablespoons Parmesan cheese, and about 2 tablespoons of your cheese of choice into a bowl. Add the egg, pepper, garlic and onion powders, parsley, and ham. Stir well until completely combined. This too can be covered and put into the fridge until ready to use (1-2 days) Assembly: I used a 9x13” pan for my 20 shells. For the quantity you want to make, you may need to adjust the pan size. Lay a thin layer of pasta sauce on the bottom of the baking sheet, sprinkle a little cheese on top of the pasta sauce. In your cooked shells spoon approximately 1 ½ tablespoons of filling into the center of the shell and fold the pasta around the filling to make a little “purse.” Continue until shells and filling are used up. Spoon a generous amount of sauce over the shells. Sprinkle remainder of cheeses over the shells (you can adjust the cheese – more or less, to your liking). Baking: Cover with foil. Put into a preheated 350 f. degree oven. Cook for approximately 40-45 minutes until heated through and hot. Serve with a simple salad, French bread, and of course, a nice glass of red wine! Enjoy.
