Skin can be left on 1 cup peeled butternut squash, cut into approx. 1” cubes 2 small peeled carrots, thickly sliced 2 peeled parsnips, thickly sliced 1 rib of celery, thickly sliced 3/4 cup white wine (can use broth or water instead) 4 cups vegetable or chicken stock 2 cup chopped kale How to Fix: In a large pot over medium-high heat, add about 2 tablespoons of oil. Once the oil is hot, add in the sliced sausage allow it slightly brown. (Smoked sausage is usually fully-cooked when purchased, but always check the packaging for more information.) Remove from pan. Wipe pan of excess oil before sautee'ing onions. Add in the onion, and stir to slightly brown. Add white wine to deglaze the pan. Add paprika, bay leaf, thyme, and the garlic, and stir to combine. Add in the carrots, parsnips, celery, potatoes, and butternut squash, and add the stock, and bring to the boil. Reduce the heat to medium-low to a simmer. Simmer, covered for approximately 40 minutes until vegetables are tender. At this point, add back the sausage and the kale. Stir to combine and allow the kale to wilt into the soup for a few minutes. Serve with a hunk of bread. Divine!!
