A one-pan entree -- perfect for one, two, or increase the recipe and make it for a crowd. An easy recipe with a very elegant feel to it. Make it on a week night or any night. The recipe and instructions are listed below. Enjoy! EASY CHICKEN IN MUSTARD SAUCE: 2 chicken thighs, bone in, without skin. You could also use chicken breasts. S&P to taste ½ teaspoon Garlic Powder Olive oil for sautee'ing ½ small onion, thinly sliced 2 Tablespoons Marsala, or white wine, or water to deglaze pan 4 oz sour cream 3 oz non-fat plain Greek yogurt 1/2 tablespoon Dijon mustard 1 teaspoon whole-grain mustard (if you don’t have it, just eliminate) Directions: Sprinkle the chicken thighs with salt and pepper, and garlic powder. Turn thighs over and repeat with seasonings. Using medium heat on your stove, add the olive oil and let it get hot. Add chicken and brown well. Turn chicken over and begin browning on that side. At this point add the sliced onions and stir them in – actually place a few of the onions under the chicken. If pan is getting too hot and chicken and onions are browning too quickly, reduce heat. (I removed onions before the chicken was done because they were getting overly brown -- so keep an eye on them.) Saute uncovered for about 20 minutes or until chicken temperature registers 160 with meat thermometer. Turn chicken halfway through cooking. Transfer chicken to a plate. Add the Marsala, yogurt, sour cream, and mustards. If you took the onions off earlier, add them back into the pan as well. Cook for approximately 1-2 minutes until ingredients are well combined and hot. If sauce is a little thick, you can thin it with a bit of milk. ​Return chicken and onions to pan and heat through.
