Best Spicy Beans & Rice | DINNER ON A DIME!

In today's video, Jill shows you how to cook up a Cheap Eats, one-pot, spicy beans and rice dish. Dress it up or leave it as is -- this is a great dish! Ingredients 1 1/2 cups basmati rice 1 teaspoons kosher salt, or to taste 1/2 teaspoon freshly ground black pepper 1 teaspoon ground cumin 1/2 tablespoon chili powder 1/8 teaspoon cayenne pepper (optional) 1/8 teaspoon dried oregano 2 tablespoons olive oil 8 oz jar tomato salsa 1 cup chicken broth 2 cups cooked (canned or home made) kidney beans, rinsed and drained Directions Preheat the oven to 350 degrees F (175 degrees C). Pour white rice into a casserole dish and season with salt, pepper, cumin, chili powder, cayenne, and oregano. Pour in olive oil and stir until rice is thoroughly coated with oil. Add salsa, chicken broth, and kidney beans; stir until evenly combined. Cover. Bake in the preheated oven until rice is tender, about 1 hour and 10 minutes.
