BEST!!! Cream of Zucchini Soup - Great Recipe for Instant Pot or Stovetop!

In today's video Jill teaches you how to make a delicious Cream of Zucchini Soup. This soup can be made in the Instant Pot or Stovetop. It is a simple recipe with excellent flavor. It's really good served cold as well. CREAM OF ZUCCHINI SOUP Instant Pot or Stovetop AUGUST 2023 2 Teaspoon Olive Oil 1/2 small yellow onion, chopped ¼ teaspoon garlic powder 3 ½ cups chopped (diced) zucchini. It took approximately 3 medium zucchinis 1 ¼ cup vegetable broth, chicken broth, or water. Salt to taste (I salted after cooking) Black Pepper to Taste ½ cup cream, half-half, etc. We use fat-free half & half Instructions Begin Instant Pot or pressure cooker on Saute mode. Heat oil. Add the onions and the zucchini. Saute until they have softened a little and gone a bit translucent. Add the thyme, garlic powder, black pepper and stir to combine. Add the broth (or water). Close the lid securely. Turn the black vent knob to "sealing". Select Manual on the Instant Pot. Cook on High Pressure for six minutes. Once the cooking has finished, let the instant pot sit for 10 minutes. This is called a “slow release.” After the 10 minutes, you can do a final “quick release,” which means finishing releasing the pressure in the pressure cooker. Puree the soup using an immersion blender until smooth. You can also use a blender. For the last splash of creaminess – add ½ cup of cream, half and half, or fat-free half and half. Taste the soup – salt and pepper, and adjust if need be.
