BEST Cranberry Orange Mini Loaves | Great for Gift-Giving!

Jill’s Best Cranberry Orange Mini Loaves 2 tablespoons ground flaxseed 5 tablespoons water 3/4 cup granulated sugar 1/2 cup plant-based milk of your choice The zest of one orange ¼ cup orange juice 1/3 cup canola oil 1 ½ teaspoons vanilla extract 2 cups all purpose flour (I use unbleached) 2 teaspoons baking powder 1 cup fresh or frozen cranberries, chopped ½ cup finely chopped pecans, Optional (or nut of your choice) Orange Glaze 2 cups confectioner’s sugar 2 tablespoons orange juice 1/2 teaspoon pure vanilla extract Mix the flaxseed meal with the water. Stir well, and set aside. It will become thick and slurry-like in about 10 minutes. Preheat oven to 350 F. Prepare four mini loaf pans with a light oiling and parchment paper sling. I used 3” x 5” sized pans. In a large bowl combine the flour, baking powder, and salt. Set aside. Combine the flax “egg”, sugar, orange juice, milk, oil, orange zest, and vanilla. Mix very well to combine. Add the wet ingredients to the dry ingredients. Stir gently to combine. All the flour should be stirred in. Add the chopped cranberries and the chopped pecans. Gently combine. Scoop the dough into the four loaf pans. The dough should be about ¾ of the way up the sides of the pans. Place in your pre-heated oven. Bake for approximately 18-20 minutes. Use a toothpick to check for doneness. If the toothpick comes out clean the breads are done. If there’s a bit of dough on the toothpick, bake for another 2-3 minutes. My little loaves too 22 minutes. Cool on a rack. Once the loaves are completely you can glaze them. If you want to freeze them for later on, wait to glaze until the loaves are defrosted as the glaze doesn’t hold up well in the freezer.
