This will be your go-to black bean soup recipe. And, easy with the instant pot. It's such a yummy recipe. It was so delicious on a cold winter day. (2 1/2 cups) dry black beans, sorted through to remove pebbles and bad-looking beans. Rinse and drain. Soak overnight in cold water. TIP: This recipe can be made with un-soaked black beans, but I use the quick soak method. Place beans that have been gone through with pebbles and cracked or bad looking beans removed. Rinse with water. Add to a pot of boiling water. Boil for 2 minutes. Remove from heat. Place lid on and let sit for one hour. Drain off soaking water, then continue with the remainder of the recipe: 2 teaspoons olive oil (or a couple sprays of "Pam") 1 medium yellow onion, coarsely chopped 2 ribs of celery, roughly chopped 2 small carrots, peeled and roughly sliced 3 cloves garlic, chopped 1 tablespoon chili powder 2 teaspoons ground cumin 2 bay leaves Salt & Pepper to taste 5-6 cups water (broth could be used) If using un-soaked beans, increase the water to 7 cups. HOW TO MAKE IT: Set the IP to “saute” function. Allow pot to heat up. Add the olive oil. Add in the onion, celery, and carrot. Saute briefly until onions just begin to soften. Do not brown. Add the garlic. Next, add the spices and stir to combine with the vegetables. Allow the spices to become warmed and fragrant. Add the beans and water. Switch the IP from saute to manual setting. Place the lid on the IP, making sure the vent is closed. If using soaked beans, set time for 50 minutes. If using un-soaked (dry) beans, cook for 70 minutes. Once the cooking has been completed, let the pressure go down by “Natural Release."” If there is too much liquid in the pot after cooking, remove a cup or two and set aside in case your soup becomes too thick after blending. (You can always add a bit of the water back into the soup if it appears to be too thick for your preference.) Use an immersion blender or regular blender. BE CAREFUL OF THE HOT LIQUID! to blend your soup until thick and creamy. Season with salt and pepper if needed. Garnish with sour cream, shredded cheese, plain yogurt, avocado, cilantro, etc. YUM!!
