Around the World in 80 Breads -- Recipe #1 NO-KNEAD FRENCH BREAD

Let's begin a journey to discover breads from around the world. This will be a fun series - The first bread is a simple, no-knead French bread. I call this an Americanized style. It's so simple and ready in just a few hours. Here's the recipe: Around the World in 80 Breads Bread Number One: No-Knead French bread (Americanized-Version) Ingredients 1 ½ cups warm water (about 100 degrees f) 2 ½ teaspoons yeast (Active Dry or Instant) 1 teaspoon granulated sugar 1 ½ teaspoon salt (I use Kosher salt) 3 1/4 cups plus more for dusting dough -- I use all-purpose, or bread flour Instructions In a large bowl mix together the warm water, sugar and yeast. Whisk well to dissolve the yeast and sugar. Let sit for about 10 minutes. You’ll see the yeast come alive and get bubbly on the surface of the water. You’re ready to mix the dough. Add the flour and salt to the bowl. Stir together until a sticky dough forms. Don't worry if it looks all shaggy and rough – that’s how it’s supposed to look. Scrape down the sides of the bowl, cover with plastic wrap. Let it sit for approximately 2 hours or until it doubles in size. After the rise time when the dough has about doubled, scrape the dough from the bowl on to a flour-dusted piece of parchment paper. Give the dough a good dusting of flour and begin pulling the sides of dough up onto itself to form a round. Tip: Once I think the dough is in a nice round ball, I take the dough and parchment paper and lift it up and place it in a bowl to maintain the shape. Cover with plastic wrap and let it rise for another 40 minutes. Remove the plastic wrap and lift the parchment paper and dough and place it in your cold Dutch oven. Take a sharp knife and give the dough a couple of slashes to open up the dough which will help make the top all crispy once it’s baked. Place the lid on. Place your Dutch oven in the cold oven. Set the temperature to 450 degrees f. Bake for 45 minutes. Carefully remove the lid. (IT’S GOING TO BE HOT!!!) Bake for another 15-20 minutes until the bread is a beautiful deep golden brown. Carefully remove the Dutch oven from the oven (IT’S GOING TO BE HOT!!!) Remove the bread from the pan and place the bread on to a cooling rack. It should rest for at least an hour before slicing or it’ll be too warm and “smoosh” down.
