Mix until well combined. Spread mixture evenly and all the way to the edges of each tortilla. Place eggs in a shallow dish. Stir together crushed pork rinds, 1/2 teaspoon Italian seasoning, and remaining Parmesan cheese in second shallow dish. Dip each tortilla, meat side down, into egg mixture, allowing excess to drip off. Press lightly into pork rind mixture to coat. Heat a nonstick skillet over medium heat, spray with oil and cook tacos in batches. Place tortillas, breaded side down, in the skillet and allow to cook until golden brown and crisp, about 4 minutes. Flip and cook until lightly golden brown, about 1 more minute. Repeat with remaining tortillas and spray with more oil as needed. For the Caprese salsa: In a medium bowl, stir together the tomatoes, mozzarella, basil, onion, remaining salt and pepper, vinegar, and 1 tablespoon olive oil. Fold tacos in half, fill with Caprese salsa, and serve.
