Keto For Normies Podcast: https://www.ketoconnect.net/keto-for-normies/ --------------- **Low Carb Pigs In a Blanket Recipe** Highfalutin' Low Carb 1/2 cup coconut flour (60 grams) 2 tsp baking powder 1 tsp xanthan gum 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp Italian seasoning 2 1/2 cups mozzarella cheese shredded (250 grams) 2 oz. cream cheese (55 grams) 3 large eggs, beaten 2 Tablespoons melted butter 12 bun length hotdogs or smoked sausages 1 beaten egg for egg wash 1. Preheat oven to 400°F and line a baking sheet with parchment paper. 2. Sift together coconut flour, baking powder, xanthan gum and spices in a small bowl and set aside. 3. Melt mozzarella cheese and cream cheese in microwave on high power for one minute. Stir. Place back in microwave on high for another minute. Stir. 4. Using damp hands or dough hooks, mix in beaten eggs, butter, and coconut flour mixture until a dough is formed. Dough should be a bit wet and sticky. 5. Place a piece of parchment paper on countertop and turn out dough. Place another piece of parchment on top and roll into a thin rectangle. 6. Using a knife or pizza cutter, slice the dough into 12 thin strips. Wrap each hot dog with a dough strip and place on parchment-lined baking sheet. 7. Use a pastry brush to brush the rolled hot dogs with the beaten egg. 8. Bake at 400°F for about 18-22 minutes or until lightly browned. Let cool and enjoy! Makes 12 servings.
