Crust: 100g (1 cup) almond flour, sifted 5 tablespoons unsalted butter 3 tsp powdered sweetener 1/2 tsp vanilla extract 1/4 tsp salt Gelatin: (split between filling and topping): 2 tsp unflavored gelatin 50ml very hot water Cream Cheese Filling: 200g (7oz) full fat cream cheese, softened 100ml heavy cream 4 or 5 tablespoons powdered sweetener 1 tsp vanilla extract 1/4 tsp salt Berry Topping: 100g (about 1/2 cup) fresh blueberries (or other berry) 2 tsp powdered sweetener Garnish: 100g (about 1/2 cup) fresh blueberries around cake border Instructions: 1. In a medium bowl, combine all of the ingredients for the crust, and mix well. Press this into a 6" or 7" springform pan or tart pan with removable bottom. Chill until next step. 2. In a large bowl, combine all of the ingredients for the cream cheese filling, and beat well with an electric mixer until soft and fluffy, but not "whipped." Set aside. You will add half of the gelatin mixture in a moment. 3. In a food processor (or a medium bowl with a hand blender) pulse the berries and sweetener together until they are a liquid. Set aside. You will add half of the gelatin mixture in a moment. 4. In a small bowl, combine the gelatin and HOT water, and stir until dissolved. 5. Working quickly, add half of the gelatin mixture to the cream cheese filling and the other half to the berries. Use the hand mixer to combine the gelatin mixture with the cream cheese filling, and pulse the food processor to combine the gelatin with the berries. 6. Add the cream cheese filling to the springform pan on top of the crust, and smooth the top. Make sure the filling reaches the edges of the pan. 7. Pour the berry mixture on top of the filling and gently tilt the pan to evenly cover the top of the dessert. Make sure the topping reaches the edges of the pan. 8. Place fresh blueberries around the edge of the pan in a circle. Cover gently with plastic wrap and place in the refrigerator for 4-6 hours, or preferably overnight. 9. Run a sharp knife along the edges of the pan to loosen the cake, and gently remove the springform sides. Slice and serve. Store refrigerated for 5-7 days.
