Happy Vlogmas Day 5, babes—today I’m taking y’all through my weekly meal prep routine that keeps me on track for weight loss with PCOS, even when I’m a whole hot mess and it’s already 1:30 p.m. I was on a time crunch because my husband’s on swing shifts, so I needed to get his dinner (and my later lunch) prepped fast. I also unboxed my new Dash Safe Slice mandolin and… let’s just say I thought I was getting cubes and I got strips. We’re learning, okay? I prep three main proteins/meals: a quick steak situation (cornstarch, lemon pepper, adobo, garlic/onion powder, lemon juice, soy sauce—no measuring, just season until you feel it in your spirit), crispy air-fried cornflake chicken (gluten-free “breading” with an egg mix + oat milk, bouillon, and Creole seasoning), and a Mediterranean-ish chicken thigh bowl moment with red wine vinegar, lemon juice, and Johnny’s Garlic Spread seasoning (I got a little too zesty and had to humble myself and turn it into a sauce with water). For sides, I keep it easy with Minute Rice (sazón for that cute orange rice) plus Costco freezer veggies—garlicky greens and plain broccoli—because meal prep should not be hard, period.
