Boil the soya chunks for 5 minutes. Drain, rinse, and squeeze out excess water. 2. Blend the soya chunks, soaked channa dal, oats, cumin seeds, ginger, and green chili into a thick batter. Add minimal water. 3. Transfer to a bowl. Mix in onion, carrot, spinach, and salt. 4. Heat a non-stick pan and lightly grease it. 5. Pour a ladle of batter and spread gently into a thick uttapam. 6. Cook on medium heat for 3–4 minutes. Drizzle a few drops of oil around the edges. 7. Flip and cook until golden brown and crisp. 8. Serve with mint chutney, tomato chutney, or yogurt. Approximate nutrition for the entire batter: * Calories: 650–700 * Protein: 45–50 g * Fiber: 18–22 g Variation: Add 2 tbsp flaxseed powder or chia seeds to increase fiber and omega-3 content.
