Smoke at 250°F for approximately 2.5 hours. Wrap tightly in two layers of foil with brown sugar, honey, butter, and BBQ sauce applied to both sides. Place the ribs meat side down and cook for 2 hours. Open the foil into boats, flip the ribs, brush with additional sauce, and cook for 30 minutes to allow the sauce to set.
