↓↓↓ CHECK THIS OUT ↓↓↓ Ingredients (3–4 Servings) Approximately 1.5 lbs Yukon Gold potatoes Approximately 1.5 lbs thinly sliced steak (top sirloin recommended) 1 red bell pepper 1 green bell pepper 1 white onion Extra virgin olive oil Seasonings: salt, pepper, garlic powder, onion powder, and smoked paprika 1 tablespoon minced garlic 1 teaspoon Worcestershire sauce Low-fat shredded white cheddar cheese Parsley, for garnish Sauce Approximately 1/3 cup low-fat sour cream or Greek yogurt Approximately 1–2 tablespoons hot sauce, to taste Approximately 1 tablespoon honey A small pinch of salt, pepper, garlic powder, and smoked paprika Notes Some measurements are estimated. Adjust ingredients to taste. Directions Wash and dry the potatoes, then dice into small cubes. Place in a large bowl, add olive oil and seasonings, and mix until evenly coated. Spread the potatoes evenly on a lined baking sheet. Bake at 425°F for 30–35 minutes, stirring halfway through. While the potatoes are baking, dice the bell peppers and onion. Add them to a large skillet over medium heat with a small amount of olive oil. Season with salt, pepper, and garlic powder. Sauté for 8–10 minutes, or until cooked to your preference. Thinly slice the steak. Once the vegetables are finished, remove them from the skillet. Add additional oil if needed and increase the heat to high. Add the steak and season with salt, pepper, and garlic powder. Cook for 4–5 minutes, stirring occasionally, then add the minced garlic, Worcestershire sauce, peppers, and onions. Mix well and cook for an additional 3–4 minutes.
