This creamy asparagus soup is so rich tasting that you would never know it's vegan. The secret ingredient is coconut milk, which replaces heavy cream. The addition of cauliflower gives it a lovely texture and flavor. Serve this in the spring when asparagus is in season, or anytime of the year when you want to enjoy an elegant soup! RECIPE: Vegan Asparagus Soup Serves 4 INGREDIENTS 1 tablespoon olive oil 1 medium onion, diced 2 cloves garlic, minced Sea salt and white pepper to taste 1 ½ pounds asparagus, trimmed and chopped into 1-inch pieces 8 ounces (1 cup) cauliflower florets 3 to 4 cups vegetable broth (use only 3 if you like it thicker) 1 cup coconut milk Juice of ½ lemon For the Soup Garnish: 2 tablespoons coconut cream Lemon slices 8 asparagus tips, lightly steamed or boiled 1 tablespoon chopped parsley INSTRUCTIONS Heat the olive oil in a large soup pot over medium heat. Add the onion. Cook and stir for 5 minutes. Add the garlic. Cook for a couple more minutes, or until the onions are translucent. Add the asparagus, cauliflower florets, and a little sea salt and pepper. Cook and stir for a few minutes. Add the vegetable broth and coconut milk. Bring to a boil over medium high heat, then reduce the heat to simmer on low, lightly covered, for 20 minutes. The asparagus and cauliflower should be fork-tender. Add additional sea salt and pepper to taste. Add the lemon juice. Purée the soup using an immersion blender or regular blender. If using a regular blender, be careful when blending hot soup and be sure to work in batches. Blend the soup until it’s completely smooth. Adjust seasoning to taste by adding a little more sea salt and pepper if you wish, as well as more optional lemon juice. Divide the soup equally among four bowls. Garnish each bowl with a drizzle of coconut cream, a lemon slice, two asparagus tips and a pinch of parsley.
