A batch of homemade iced tea is like a breath of fresh air on a hot summer day. There’s something exotic about a little vanilla in a drink, and mint gives it a refreshing balance that helps with digestion. In the video I prepared a variation of the recipe below from my cookbook, Vegelicious. This cold steeping method requires no cooking! RECIPE: Vanilla Mint Kukicha Tea Cooler Makes 1 liter Ingredients: 4 cups cold water 4 kukicha tea bags (or rooibos tea or black tea) 1 vanilla bean, split lengthwise 1 cup fresh mint leaves, tightly packed 2 teaspoons maple syrup (optional), or use stevia or monk fruit to sweeten Instructions: 1. Pour cold water into a large pitcher. Add the tea bags, vanilla bean and mint. 2. Let the mixture stand at room temperature for 30 minutes, then transfer to the fridge to steep for 8 hours. 3. Strain the finished tea and stir in the maple syrup if using. 4. Serve chilled with a sprig of fresh mint and a lemon wedge.
