RECIPE Ground Beef and Rice Serves 4 Ingredients: 1 lb. ground beef 1-2 Tbsp. avocado oil ½ yellow onion, diced 1 carrot, diced ½ teaspoon garlic powder ½ cup (75 grams) frozen peas ½ cup (82 grams) frozen corn kernels 2 cups (350 grams) cooked white rice ¼ cup (2 oz.) coconut aminos or soy sauce 3 Tbsp. scallions, thinly sliced Instructions: In a large skillet, brown the ground beef over medium heat. Once finished, transfer to a bowl, Drain the fat off if you want. Rinse the skillet. In the same skillet, heat the avocado oil over medium heat. Add the onion. Cook and stir for a few minutes. Add the carrot and garlic powder. Cook and stir for a few more minutes. Add the peas and corn and cook for a few more minutes while stirring. Add the white rice, cooked beef and coconut aminos. Cover and cook for 5 minutes. Uncover, cook and stir a few more minutes. Serve topped with scallions.
