Oven baked pork tenderloin is so easy to make. It makes a delicious option for dinner when you're craving homemade comfort food. RECIPE: The Best Baked Pork Tenderloin Serves 4 Ingredients: ⅓ cup (79 mL) extra-virgin olive oil 2 tablespoons orange juice 2 tablespoons apple cider vinegar 1 tablespoon maple syrup ½ teaspoon Dijon mustard ½ teaspoon garlic powder 3 teaspoons Italian seasoning, divided (1 in marinade) 1 ¼ teaspoons sea salt, divided White pepper to taste 1 ½ pound pork tenderloin 2 tablespoons beef tallow or avocado oil 3 tablespoons ghee or softened butter 2 tablespoons scallions, thinly sliced Instructions: 1. Make the marinade: In a medium size bowl, combine the olive oil, apple cider vinegar, orange juice, maple syrup, garlic powder, 1 teaspoon of the Italian seasoning, Dijon mustard, ¼ teaspoon of the sea salt, and white pepper to taste. Whisk together. 2. Place the pork tenderloin in a glass container. Pour the marinade over it. Using a silicone brush, brush the pork to evenly coat it with the marinade. Place in the refrigerator overnight. 3. The next day, drain and discard the marinade from the pork. 4. Preheat the oven to 350 degrees F. 5. Line a rimmed baking sheet with parchment paper. 6. Season the pork with the remaining sea salt and white pepper to taste. 7. Heat a large cast iron skillet over medium high and add the beef tallow. Once the pan is nice and hot, add the pork. Fry on all sides until evenly browned. 8. Transfer the pork to the lined baking sheet. 9. Sprinkle the pork with the remaining 2 teaspoons of Italian seasoning. Spread the ghee over the pork. Wrap the pork with the parchment paper, tucking in the ends. 10. Bake the pork in the preheated oven for 25 minutes, or until it has reached an internal temperature of 145 degrees at the thickest part. 11. Remove the pork from the oven. Let it rest for 5 minutes. Remove the parchment paper. Slice against the grain. Serve with any reserved pan juices and sliced scallions. NOTE: Store leftovers in a covered container in the refrigerator for up to three days.
