Use fresh strawberries and mint to add the perfect touch. I love to make these for breakfast or even a light dessert. RECIPE: Strawberry Yogurt Parfait with Homemade Granola Serves 2-4 Ingredients: 1 ¼ cup (250 grams) fresh strawberries, chopped 1 tablespoon strawberry jam 1 tablespoon maple syrup or honey 1 cup (250 grams) Greek yogurt 1 cup (100 grams) granola (see recipe below) Fresh mint for garnish Instructions: 1. Place the strawberries in a medium size bowl. In a small bowl combine the strawberry jam and the maple syrup or honey. Stir well. Add to the fresh strawberries and gently toss. Set the bowl aside for 10 minutes. 2. Have 2 to 4 glasses ready to assemble the parfaits. Depending on the size of your glasses, you will be able to create either two or 4 filled glasses. Place a small amount of the Greek yogurt in each glass. Add a spoonful of the strawberries. Top with a spoonful of the granola. Alternate layers until you reach the top of your glasses. Decorate with a few slices of berries and the fresh mint. NOTE: The parfaits are best served fresh to avoid the strawberries getting watery. Homemade Granola Makes about 3 cups Ingredients: 2 cups rolled oats (use gluten-free oats for gluten-free granola) ¼ cup maple syrup or honey ¼ cup melted beef tallow or coconut oil ¼ teaspoon sea salt ¼ teaspoon vanilla powder or ½ teaspoon pure vanilla extract 2 tablespoons GoRaw sprouted pumpkin seeds or toasted pumpkin seeds (pepitas) 2 tablespoons pine nuts (or pumpkin seeds, to keep the recipe nut-free) ¼ cup coconut flakes, coarsely chopped Optional spice: ½ teaspoon cardamom powder Optional mix-in: A handful of raisins or dried fruit of your choice Instructions: 1. Preheat the oven to 350 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper. 2. In a large mixing bowl, combine the rolled oats, maple syrup, beef tallow, sea salt and vanilla powder. Add the oil, maple syrup and/or honey and vanilla. Stir well to thoroughly mix everything together. Spread the granola onto the prepared baking sheet in an even layer. 3. Bake in the preheated oven for 10 minutes. Remove the granola from the oven and give it a stir. Return to the oven to bake for another 12 minutes. Remove the granola from the oven. Cool completely before using or storing in a covered container. The granola will get crispy as it cools.
