This healthy vegan recipe for my easy lentil soup is a winner! Dinner is served… Red Lentil Soup Makes 4 servings Red lentils are a quick cooking bean, so this is a fast and easy dinner recipe. Ingredients 2 tablespoons olive oil ½ onion, chopped 1 carrot, peeled and diced ½ cup celery, diced ½ cup green cabbage, diced ½ cup winter squash, peeled, deseeded and diced ½ cup zucchini, chopped ½ teaspoon ground cumin 2 garlic cloves, minced 1 cup red lentils, rinsed 5 cups unsalted vegetable broth or bone broth 1 cup chopped arugula Sea salt White pepper 2 tablespoons lemon juice 3 tablespoons chopped fresh cilantro Instructions In a large pot, heat the olive oil over medium high heat. Add the onion, carrot, celery, cabbage, winter squash and zucchini. Cook and stir for a few minutes, or until golden. Add the garlic, cumin, and cook and stir for 2 more minutes. Add the red lentils and vegetable broth. Bring to a boil, then reduce the heat to medium-low. Simmer, partly covered, for about 30 minutes, or until the lentils are soft. Add the arugula and sea salt and white pepper to taste. Stir in the lemon juice. Cook for a few more minutes. Serve hot, with a pinch of the chopped cilantro. #lentilsoup #easyveganrecipes
