This chicken pot pie as an easy skillet meal. [ASMR] Creamy gravy filled with chunks of chicken and tender vegetables, topped with a crisp butter puff pastry. Chicken potpie is as cozy as cooking gets! ⬇️⬇️⬇️ RECIPE BELOW ⬇️⬇️⬇️ Chicken Pot Pie with Puff Pastry Topping Serves 4 INGREDIENTS: 1 8.8 oz (250 g) round sheet of frozen butter pastry (I used White Toque brand) 3 tablespoons (42.52 g )butter ½ cup (26 g) onion, diced ½ teaspoon (3 g) sea salt 1 teaspoon (1 clove) minced garlic 1 teaspoon (1.49 g) poultry seasoning ¼ cup (34 g) all-purpose flour 1 cup (240 mL) chicken broth ½ cup (120 mL) half and half cream 12 oz. frozen mixed vegetables 2 cups (366 g) cooked chicken, cubed 1 teaspoon (4.79 g) lemon juice A few dashes white or black pepper 1 egg 1 tablespoon (15 g) water INSTRUCTIONS: Preheat the oven to 400 F degrees. Allow the frozen butter pastry to thaw at room temperature. Add the butter to a large cast iron skillet over medium heat. Add the onion and cook and stir for a few minutes. Add a pinch of the sea salt, the garlic and the poultry seasoning. Cook and stir for 2 to 3 more minutes. Stir in the flour and cook for 30 seconds, continuing to whisk. Gradually add the chicken broth to the flour mixture, whisking constantly. Now add the half and half cream. Bring to a boil while gently whisking. Simmer on medium heat for a few minutes. Stir in the frozen mixed vegetables. Stir and cook for a few minutes. Add the cooked chicken and lemon juice. Stir until all of the chicken is well coated with the sauce. Shut off the heat while you prepare the butter pastry topping. Add the white pepper and additional sea salt to taste. Roll out the butter pastry. Cut it into 12 equal strips. Lay 6 of the butter pastry strips over the potpie filling. Add a strip going the opposite direction and weave it to form a lattice pattern. Repeat with the remaining 5 strips. Whisk together the egg with the water. Brush the egg wash on the top of the puff pastry. Bake for about 45 minutes, or until the filling is bubbly and the pastry top is golden. Serve warm.
