This version of brown rice is nice and soft. It tastes great with a drizzle of olive oil or a sprinkle of toasted seeds. Ingredients: ⅔ cup brown rice ⅓ cup millet Apple cider vinegar 2 ½ cups water Pinch sea salt Instructions: Step 1 (the night before) The night before you plan to cook the rice, rinse and soak it. To do this, place the rice and millet in a medium size pot. Cover with water and swish it around. Pour the water off while catching the grain in a fine mesh strainer. Rinse it again a few more times. Place the rinsed grains back in the pot. Cover with fresh water. Add a few drops of apple cider vinegar. Step 2 (the next morning) In the morning, drain the rice and millet in a strainer. Rinse it and place it back in the pot. Add the 2 ½ cups of water and a pinch of sea salt. Step 3 Place the pot on the stove and bring to a boil, uncovered, over medium high heat. Once it comes to a full boil, reduce the heat to simmer on low, covered, for 1 hour. Check it periodically and if it looks like it’s going dry on the bottom add a small splash of water to prevent burning and sticking to the bottom. Step 4 Once the rice/millet is finished cooking, gently fluff with a fork and transfer to a bowl to cool. Serve as it is or with your favorite toppings like gomasio, toasted seeds or whatever you enjoy. #brownrice #brownricerecipe
