This delicious gluten-free angel food cake is soft and fluffy. Enjoy it served with whipped cream and fresh berries. My daughter and I had fun making (and eating) this beautiful cake. We added sprinkles for a pretty touch! RECIPE: Angel Food Cake Makes 1 cake Ingredients: 1/4 cup arrowroot flour/starch 3/4 cup rice flour or gluten-free all-purpose flour 3/4 cup Lakanto powdered sugar* 11 egg whites, preferably at room temperature 1/2 teaspoon sea salt 1 1/2 teaspoons cream of tartar 3/4 cup sugar, finely ground 1/2 cup rainbow sprinkles 1 teaspoon vanilla extract Instructions: Step 1 Preheat the oven to 350°F. Step 2 In a large bowl, combine the arrowroot flour, rice flour and Lakanto powdered sugar. When so to blend. Set aside. Step 3 In another large bowl, beat the egg whites until foamy. Add the sea salt and cream of tartar. Beat again, until the egg whites hold stiff peaks. Step 4 Add the finely ground sugar, 1 tablespoon at a time, beating well after each addition. Gently fold in the flour/Lakanto powdered sugar mixture, adding 1/2 cup at a time. Carefully fold in the sprinkles and vanilla. Step 5 Spoon the cake batter into an ungreased angel food cake pan. Bake on the lowest oven rack for 40 minutes. The top should be lightly golden and spring back to the touch. Step 6 Remove the cake from the oven and invert the cake pan onto a cooling rack. Allow the cake to cool completely upside down. Once it has cooled down completely, carefully slide a moistened spatula or butter knife around the edge to loosen the cake. Remove the cake and transfer to a serving plate. Serve with your favorite whipped topping and fresh berries. *Note: I cut the sugar in half by using Lakanto powdered sugar in place of regular sugar.
