How to Make Roast Duck in Orange Sauce - The Chinese Way Roast Duck in Orange Sauce is one of those classic recipes that just works. The combination of the rich, dark duck meat contrasting with the sweet and tangy orange sauce is to die for. The French have their way of doing it and the Chinese have adapted it to give it an eastern twist. Both are wonderful and I'm of the opinion that you can't have too much of a good thing! The addition of some chinese ingredients adds a different dimension to the flavour but I've added something else to give it even more depth - marmalade! The slight bitterness from the peel adds even more to this dish. I did it as an experiment a few years ago and was so happily surprised that it worked that I use it every time I make this dish.
