Chicken and cashew nuts in yellow bean sauce is one of the classic chinese food flavour combinations. The crispness of the peppers and onions along with the crunchiness of the cashew nuts compliments so well the tenderness of the chicken and the delicious yellow bean sauce. My recipe is simple to do and the only ingredient you may not be familiar with is the yellow bean sauce which is made from crushed soy beans. The brand I use is Amoy (I'm not sponsored by them) which you can find at your local chinese/asian supermarket and is inexpensive. A note on soy sauces - not all of them are the same. I find that some lack flavour and body and can be just salty, which is not the point. My favourite brand at this point is Lee Kum Kee which I find to contain the subtle flavours of a great soy sauce both for cooking and dipping.
