Chicken Chow Mein has long been one of the nation's favourite Chinese dishes in restaurants and takeaways. But did you know that as well as being really easy to make, it can be very healthy too! Using my own recipe - packed full of fresh vegetables and with stir frying using very little oil, this is a treat that can be eaten almost guilt-free! Add the fact that it's a dish that can make a few ingredients go a very long way and it makes cooking your own chicken chow mein a real no-brainer! Best Wishes Michael :) For 2-3 people you will need: 2-3 chicken thighs, roasted, skinned and shredded 400g egg noodles 100g beansprouts 1/2 a pepper (yellow, green or red) 100g chinese cabbage 3 spring onions 1 clove of garlic For the stir fry sauce mix up the following: 2 tbsp dark soy sauce 1 tbsp light soy sauce 1 tbsp of oyster sauce 1 tsp of sesame oil You will also need 3 tbsp of cooking oil to stir fry Wok time is approx 7-8 mins
