Can You Tenderise a Cheap Steak? How to Velvet a Tough Steak Experiment - The Results are Surprising... Recently I released a video showing how to velvet meat - a technique widely used by Chinese takeaways and restaurants - to make it more tender. One comment left by a viewer really intrigued me - would velveting work on a cheap steak to make it more tender and succulent? Well there was really only one way to find out... I was really interested in finding out what might happen because although velveting undoubtedly works on thin slices of meat, using it on a big slab of steak could be a totally different proposition. And I wanted to know how it would affect the taste and texture. Watch the video all the way to find out - the results are very interesting indeed!
