This Bang Bang Chicken recipe is one of my own inventions inspired by my love of home made satay sauce, roast chicken thighs and my favourie noodle of them all - the Udon noodle. This dish is pure heartwarming comfort food, asian style! The sweet and mildly spicy, peanutty satay sauce complements the crispy skin of the chicken and the crisp salad beautifully. And the udon noodles wraps up all the flavours and textures wonderfully well. I defy anyone (except for those with a nut allergy) not to love this. One of my all time favourite foodie inventions :) You will need: 2-3 chicken thighs per person 1 pack of udon noodles per person 3-4 tablespoons of sweet chilli sauce 3 tablespoons of peanut butter 100 ml water Some romaine/iceberg lettuce 1/2 onion 2 tomatoes A good pinch of smoked paprika and garlic poeder A pinch of salt and pepper Sesame oil
