Butter basting steak is an incredible way to have a perfectly cooked steak on the stove. It works for sous vide steak, reverse sear or raw to get you to the perfect medium rare or whatever temperature you like. The best part is that it is an easy way to cook steak! I cooked a flat iron steak for this video but many other cuts work too. I love this method for rib eye steaks, new york strips, skirt steaks, sirloins and smaller filet mignon. The crust is incredible and you can infuse undertones of other flavors like a garlic butter or rosemary into the meat. There are a few tricks to doing this to get a great sear on steak. If you watch the video, pay attention to the angle of the pan, the amount of fat in the pan and where to put the steak in the pan. These three things are everything.
