About This Video

This morning I had a pretty packed workflow: I needed to roast two 1kg batches to fulfill an online order, and at the same time I wanted to power up the Wendougee Lita (BA) and the Data S to “play around” with profiles and see if I can get consistent shots across both machines. Before I even touched espresso, I did a pre-blend (Kenya + Ethiopia + Brazil as the base) and charged the Kaleido M10 Sniper. I’ve been using this roaster for years—back when I was roasting at home on my balcony—and I still like it for smaller batches because the auto-roast profile in Artisan makes life easy (the only manual part is dropping the beans). On espresso, I ran a free-flow style pressure profile: low-bar pre-infusion (around 2 bar), ramp to about 8 bar, then taper down. Using the Wendougee Milo grinder at 500 RPM and 150 micron, my first shot on the Lita was messy (squirting, channeling, “ugly turbo”), but it tasted surprisingly good—sweet and nutty even with a blend that has 40% robusta. On the Data S, I hit some software/app weirdness when trying to replay the same saved profile, so I went manual and got a much better, sweeter shot. I also compared steaming: Data S is extremely powerful and refined, but the Lita is still very consistent and more than competent for home use.
