Nigella Lawson is one of the UK's best food writers and recipe creators. Her recipe for gammon in Coca-Cola is famous, and I've never made it. So with just a ham joint, cola and an onion, I thought I'd give it a try. But while I'm there it was worth trying a few more braising liquids: gammon in Dr Pepper, and gammon in cider. Original recipe from Nigella Bites https://geni.us/R8WK8UN The recipe, such as it is: take a smoked gammon joint (I used 750g, enough for 5-6 people), cover with Coca-cola, Dr Pepper or Cider (or something else!) and add a halved onion. Bring to the boil then simmer for 90 minutes or so until tender - when you pick it up with a fork and it slides off easily. The longer you cook it, the more the texture will become pulled-style pork. Leave to relax in the liquid for at least 30 minutes before carving. For an additional touch (I didn't do this in the video, but it always works well), mix mustard with brown sugar, and slather all over the joint. Roast in a very hot oven for 10-20 minutes until a dark crust forms.
