Cooking a whole chicken sous vide, or in a water bath, is an unusual technique and one I've not tried. You vacuum seal the bird then pop it into warm water to cook for a long period of time. The advantages are it's harder to overcook and can be left to it's own devices while you get on with other things. But as I explore here it might be better to separate the chicken and cook parts individually. Short version: I set the machine to 68°C. Cook the dark meat for 5 hours, white meat for 4 hours.
