Everyone is banging on about this way to make doner kebab at home. It's all over social media, and instead of using a vertical spit and meat of unknown provenance, this version is dead simple to make at home. And when I made it, I had a strong feeling of deja vu... I remember Tom Kerridge making this nearly ten years ago. Everything that is old is new again. Ingredients 175g lamb mince 175g lamb leg or shoulder, diced 1 red onion 1 garlic clove 1/2 tsp salt 1/2 tsp MSG 1/2 tsp bicarbonate of soda 1 tsp cumin 1 tsp paprika 1 tsp onion powder 1 tsp oregano Pinch of cayenne Method Combine everything in a food processor. Roll between baking paper very thin and bake at the top of a very hot oven for 5 minutes. Blowtorch to scorch and serve with all your favourite kebab trimmings.
