I made MPW's famous salmon dish, accompanied by pommes maxim. More formally it's "Escalope de saumon Marco Pierre White" or salmon fillet in a basil cream sauce. It's a dish developed by the famous Troisgros brothers for Tefal to demonstrate the non-stick properties of their new Teflon pan. Marco learned it while working for Albert Roux and developed it for one of the iconic dishes that contributed to his three-star run at Harveys.
