I'm going to make a recipe from Marco Pierre White's BBC Maestro Vegetarian Course. Let's cook together and have a chat while I talk about the recipes in the course. Here's the full BBC Maestro course (not sponsored) https://www.bbcmaestro.com/courses/marco-pierre-white/delicious-vegetarian-cooking/ *My take on Marco Pierre White's baba ganoush (serves 1-2):* 1 aubergine 1/2 clove of garlic 1/2 lemon 1 tablespoon tahini paste Extra virgin olive oil Flat leaf parsley Roast the aubergine, skin-on. You can do this on a barbecue, or over a gas hob. Turn occasionally until softened - this will take 15-20 minutes. Once soft put on a plate and cover with clingfilm to steam for another 15 minutes. Peel off the skin. If there are some stubborn bits rub it in a bowl of cold water. Cut off the stalk and then chop roughly on a board. Grate in the garlic and squeeze over some fresh lemon. Season with salt and pepper and continue to chop and mix until well combined. Drizzle over some oil and scatter over some parsley. Serve with breads, such as... *Quick flatbreads* 2 heaped tablespoons self raising flour 75g natural yoghurt Spices as desired - I like sumac and onion powder Combine the ingredients with a sprinkle of salt in a bowl until it forms a smooth dough. Add more flour or a dash of water as needed. Leave to rest for 15 minutes. Get a dry frying pan over a high heat and press the dough into the pan. Turn the heat down to medium and cook for 2-3 minutes until coloured, then turn and cook for another 2-3 minutes until golden brown. Serve immediately. #marcopierrewhite #chef #food
