A perfect palate cleanser? | Heston's perfect Christmas

In 2007 Heston Blumenthal cooked a special Christmas banquet for six celebrity guests. I've decided to try and recreate it. For this course Heston served a nitro treat - essentially a sorbet but frozen with liquid nitrogen.
