Iâm cooking up one of my wifeâs favorite recipes from my cookbook for our date night. This is a really quick recipe for a restaurant quality dinner you can make to impress your S.O. One Time Contribution to help me buy supplies: https://www.paypal.com/donate?hosted_button_id=KZTPG73VX2DXC Ingredients 1 pound - Shrimp - peeled and deveined 2 cups Quinoa - cooked and cooled - You can do this the night before. 1/2bunch - green onion - sliced 1/4 bunch - Cilantro - chopped 1 small handful - grape tomatoes - sliced 1 mango - peeled and diced Lime juice 1 oz Tequila 2 Tablespoons - Southwest Spice Mix - (ingredients listed after main recipe) 4-6 Flour Tortillas - grilled 1 Avocado - diced Instructions 1. Cook 2 cups of quinoa according to the package directions, then spread it out in a bowl or pan and cool in the fridge while you chop the veggies and mango. Alternately you can cook the quinoa the night before and store it in the fridge until youâre ready to make the salad. 2. Season the shrimp with 2 tablespoons of the Southwest Spice Mix. Marinate shrimp in the refrigerator for 15 minutes. 3. Mix the COLD quinoa with green onion, cilantro, tomato, mango, and juice from 1/2 a lime. Season to taste with salt and pepper. 4. Heat saute pan on high, then add a few tablespoons of coconut oil to your hot sautĂ© pan, then toss in the seasoned shrimp. SautĂ© them for 3-4 minutes until theyâre cooked through. 4. REMOVE the pan from the heat and add tequila. DANGER!!!!! Return the pan to the heat. If youâre using a gas stove the tequila WILL BURST INTO FLAME. If youâre on an electric stove you may need to light the tequila with a long BBQ lighter if it doesnât catch on its own. This will cause a 3 foot flame to shoot up out of the pan! Be ready for it and have a tight fitting lid for the pan, just in case it gets out of control. If you stay calm, you can do this without a lid and just let the booze burn off. Be sure not to use more than 1 shot of tequila. If you follow that rule it will only flame up for 10 seconds or so. 5. After the flames die down, add the juice from 1/2 a lime, then turn off the heat. 6. Serve the shrimp in warmed tortillas on top of the cold quinoa salad. Top them off with the diced avocado. Note from the Chef: If you would like to avoid the âflame of deathâ, just turn off the heat and add about half the tequila and all the lime juice. Let the shrimp simmer for a minute as the pan cools down. Now youâre done. Drink the rest of the shot of tequila to calm your nerves, cupcake. But seriously, be careful. If you have a grill, you can try this one outside away from any structure that might burn down around you.
