Simmer sugar, water and spices for 15 minutes, then strain out spices. 2. Cut up fruit and combine with syrup in pot, except ginger, simmer for 30 minutes on low, covered. 3. Place fruit in a large jar or crock, add rum, ginger, and if desired add walnuts, then seal up and let sit in a dark place for 1-2 months.
