SMASHED PUMPKIN HONEY BROWN ALE **5 GALLONS** Brewers Best Honey Brown Ale – Included Ingredients 12 oz – specialty grains 4 oz Carapils 3# Extra Light DME 2# Honey 2 oz – East Kent Goldings Hop Pellets 1 package - Nottingham Yeast Additional Ingredients for 5 GALLON batch: 2# 2-row barley – added Medium pumpkin – cleaned, cut up, roasted, mashed, chilled 2t cinnamon 2t ginger 2t nutmeg 1/4t cloves Optional - 150 grams Toasted pumpkin seeds 1. Mash the roasted pumpkin, 2-row barley, and pumpkin seeds(optional) @152F for 60 minutes, then add specialty grains and mash for an additional 30 minutes at 152F. 2. Strain the grains and stir in the dried malt extract, stirring until completely dissolved, then bring the wort to a boil and add the first hop addition. 3. Boil for 40 minutes, then add 2nd hop addition. 4. Boil for 10 minutes, then add Irish Moss(following package directions). 5. Boil for 5 minutes, then add honey. 6. Boil for remaining 5 minutes, then turn off heat, add the spices and cool the wort. 7. Siphon the cooled wort into a sanitized fermenter, aerate the wort, pitch the yeast and seal up the fermenter with an air lock. 8. Allow the beer to ferment for 4 weeks, then bottle with provided bottling sugar, and allow it to properly condition for 2 weeks before enjoying.
