Invert the 16 pounds (7.25Kg) of sugar by boiling in 4 gallons (16L) of water with 2 tsp (8g) cream of tartar or 8tsp (40ml) of lemon juice for 20 minutes. Cool to room temp. 2. Then split into buckets, top up with water to get a total volume of 10 gallons (40L) of sugar wash. 3. Split the cereal into 2 mesh bags and put 1 bag in each bucket.
