Arugula Pesto 3 garlic cloves 1/3 cup Marcona almonds 1/2 cup freshly grated Parmesan cheese 2 packed cups fresh arugula 1/2 cup extra-virgin olive oil salt and freshly ground black pepper to taste Directions In a Cuisinart or blender, combine garlic, almonds, Parmesan cheese and arugula. Pulse or blend until mixed. With motor running, slowly add olive oil into mixture. Blend well. If mixture seems too thick, add a little more olive oil. Transfer to bowl and salt and pepper to taste.
