Toast pecans in a skillet for ~5 minutes, until fragrant. Cool slightly and pulse into coarse crumbs. Place ¾ cup powdered sugar in a bowl for rolling; set aside. Whisk flour + cinnamon together. In a mixer, cream butter, remaining ½ cup powdered sugar, and salt until light and fluffy. Add vanilla + almond extract. Mix in the flour mixture gradually, then the pecans. Scoop dough into 1-tbsp balls; roll smooth and place on baking sheets. If dough is sticky, chill 30 minutes. Bake 13–16 minutes, until bottoms are lightly golden. Cool 15 minutes on the tray, then roll warm cookies in powdered sugar. Cool completely on a rack. The result?
