Today we’re making Mexican Wedding Cookies — also known as Snowball Cookies, Russian Tea Cakes, or Pecan Butterballs! These classic holiday cookies are tender, buttery, nutty, and rolled in a snowy layer of powdered sugar that melts in your mouth. This recipe comes from Terri Crawford and it’s beautifully simple. And if you’ve never toasted your pecans before making these cookies… prepare for your life to change. It makes ALL the difference. In this video, I’ll walk you through toasting pecans, mixing the dough, shaping the cookies, and the secret to getting that signature powdered sugar coating that actually sticks. 📌 PRINT THE RECIPE: http://adventuresineeverydaycooking.com/recipes/mexican-wedding-cookies/ 🎄 This is Cookie #10 in my 3rd Annual 12 Cookies of Christmas Series! Toast pecans in a skillet for ~5 minutes, until fragrant. Cool slightly and pulse into coarse crumbs. Place ¾ cup powdered sugar in a bowl for rolling; set aside. Whisk flour + cinnamon together. In a mixer, cream butter, remaining ½ cup powdered sugar, and salt until light and fluffy. Add vanilla + almond extract. Mix in the flour mixture gradually, then the pecans.
