In this video I take on a chipped Shun Nakiri that needed some serious work. I actually started with buffing to bring back the mirror finish first, so I wouldn’t risk dulling the knife after sharpening. Once the polish was restored, I moved to the 1x30 to reprofile the edge and cleanly remove the chip, then finished everything on the Tormek to rebuild a fresh, accurate, razor-sharp edge. This workflow—polish first, fast material removal on the 1x30, and precision finishing on the Tormek—lets the knife come out looking and cutting like new.
