Heat over medium until steaming—but not boiling. Remove from heat and let steep for 5–10 minutes. Whisk the Yolks & Sugar In a separate bowl, whisk egg yolks and sugar together until pale and thick (about 2–3 minutes). Temper the Eggs Slowly pour the hot milk mixture into the yolks a little at a time, whisking constantly to prevent curdling. Cook Until Thickened Pour the combined mixture back into the saucepan. Cook over low heat, stirring constantly with a wooden spoon or spatula, until it thickens slightly (about 160–170°F or coats the back of a spoon). Add Vanilla & Alcohol Remove from heat. Stir in vanilla and rum (if using). Let cool. Chill Strain the mixture (optional, for extra smoothness), then refrigerate for at least 4 hours or overnight. It will thicken as it chills. Serve Stir well before serving. Pour into glasses, sprinkle with nutmeg or cinnamon, and enjoy cold.
