Today’s porecast is Redwood Empire Pipe Dream Triple Toasted, and it’s doing a couple things that immediately grabbed my attention. First, it’s a blend of bourbons aged 4 to 14 years from the same Nashville as their flagship Pipe Dream four-grain bourbon (72% corn, 18% rye, 5% wheat, 5% malted barley). Then they finish it for up to a year in three different toasted oak types—French, Hungarian, and Garryana—before bottling it at 92 proof. On paper, it’s approachable, and at a respectful $49.99 MSRP, it’s priced like something you can actually keep on the radar. Second, Redwood Empire is one of my favorite brands when it comes to giving back: they plant one tree for every bottle sold, and for Earth Month they’re aiming to plant over 100,000 trees. As for what’s in the glass, I found the nose dark, sweet, and complex with toasted oak, vanilla extract, baked apples with cinnamon, and a tobacco leaf note—plus a little funk. The palate is where it really turns on: sweeter than the nose with toasted oak, vanilla custard, cherries, and a nuttiness that reminds me of a peanut butter cup, finishing with baking spice, drier oak, leather, toasted marshmallow, and more cherry. I scored it a 7.5/10—solidly Very Good—and one of the better toasted bourbons I’ve had lately, especially for 92 proof.
