Freeze-dried meals are convenient, but I’ve never been shy about saying they’re often not that delicious… and they’re definitely not cheap. So in this video I went to the river in Durango, Colorado and teamed up with Chef Corso from Outdoor Eats to do a straight-up taste test showdown: three popular freeze-dried “classics” versus DIY versions you can build from simple grocery-store ingredients. We matched chicken fried rice with a mango fried rice built on instant rice, soy sauce packets, ginger/garlic powder, sesame oil, and snow peas for actual crunch and freshness. For the chicken fajita bowl, Chef Corso showed a legit no-burner option using pre-cooked rice, beans, a chicken packet, bell pepper, and crunchy add-ins like corn nuts and French’s fried onions—plus a quick marinade with chili powder, Tajín, and Cholula. Then we went after the king of packaged meals: beef stroganoff. His version used egg noodles, peppered beef jerky (it hydrates fast), dried mushrooms, milk powder, and a mustard packet for acidity. Bottom line: the DIY meals won—more texture, more freshness, more satisfying portions, and none of that “cloying” salty-aftertaste that hangs on your tongue. If you’re car camping, hunting in the cold, or doing a multi-day trip, eating real food out there just makes the whole experience better.
