Espresso Dosing in the Modern World - CQA 510

Alex Turner asks: "So I'm relatively new to espresso making and I have one confusion: Coffee dosing. On many YouTube videos, it seems most people define a shot of espresso, for say a Cappuccino, as around 15 to 18g of coffee beans. I have a 18g basket for my Gaggia Carezza. But at the same time, some call it a double shot. So if I want to make one espresso/cappuccino etc how much do I use and if I want to make 2, do I just make 2 porta filters worth or just use 18g of coffee ,but let it run longer with 2 spouts to get the same 2:1 ratio in both cups ?
