Day 21: Co-Fermented Colombia from Jacu (Orea Z1 & V60) | Advent Calendar 2025

Day 21 of the Coffee Advent Calendar 2025! ☕ Today I’m brewing a co-fermented Colombian coffee roasted by Jacu. Co-fermented coffees are a big trend right now — processed together with fruits or other ingredients — and they spark a lot of debate in the coffee world. I first brewed the coffee using the Orea Z1 with a method tailored for co-fermented coffees. Then I brewed a second cup using the Hario V60, combining techniques taken from previous days of the calendar. Surprisingly, the V60 cup was even better: tropical, complex, with a very clear pineapple gummy bear note, great balance, and mouthfeel. In this video I reflect on the potential of co-fermented coffees to bring new people into specialty coffee, and why transparency in the supply chain is more important than ever.
