Day 15: V60 Brewing a Natural Pacamara from El Salvador (Morgon) | Advent Calendar 2025

Day 15 of the Coffee Advent Calendar 2025! ☕ Today I’m brewing a natural Pacamara from El Salvador roasted by Morgon using the V60. The coffee was funky and highly extractable, so I treated it like an anaerobic coffee and used a long pour after the bloom to control extraction. The first cup lacked sweetness and mouthfeel, so instead of grinding finer, I changed only one variable: the paper filter. Using a slower filter increased contact time by about 30 seconds, bringing more sweetness and texture without adding bitterness. A simple trick to get more from the cup while reducing channelling and bypass.
